Colorful Quinoa Salad

Ingredients:

  • 100g of quinoa
  • 200ml of water
  • 1 medium cucumber, diced
  • 1 bell pepper, diced
  • 100g of cherry tomatoes, halved
  • 50g of feta cheese, crumbled
  • 2 tablespoons of olive oil
  • 1 tablespoon of lemon juice
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions:

  • Rinse the quinoa under cold water in a fine mesh strainer.
  • In a medium saucepan, bring the water to a boil.
  • Add the quinoa to the boiling water, reduce heat to low, cover, and simmer for 15 minutes or until water is absorbed and quinoa is fluffy.
  • While the quinoa is cooking, prepare the vegetables: dice the cucumber and bell pepper, and halve the cherry tomatoes.
  • Once the quinoa is cooked, fluff it with a fork and let it cool for a few minutes.
  • In a mixing bowl, combine the cooked quinoa, diced cucumber, bell pepper, cherry tomatoes, and feta cheese.
  • In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper.
  • Pour the dressing over the salad and toss to combine.
  • Garnish with fresh parsley and serve chilled or at room temperature.
