Colorful Quinoa Salad

Ingredients:
- 100g of quinoa
- 200ml of water
- 1 medium cucumber, diced
- 1 bell pepper, diced
- 100g of cherry tomatoes, halved
- 50g of feta cheese, crumbled
- 2 tablespoons of olive oil
- 1 tablespoon of lemon juice
- Salt and pepper to taste
- Fresh parsley for garnish

Instructions:
- Rinse the quinoa under cold water in a fine mesh strainer.
- In a medium saucepan, bring the water to a boil.
- Add the quinoa to the boiling water, reduce heat to low, cover, and simmer for 15 minutes or until water is absorbed and quinoa is fluffy.
- While the quinoa is cooking, prepare the vegetables: dice the cucumber and bell pepper, and halve the cherry tomatoes.
- Once the quinoa is cooked, fluff it with a fork and let it cool for a few minutes.
- In a mixing bowl, combine the cooked quinoa, diced cucumber, bell pepper, cherry tomatoes, and feta cheese.
- In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper.
- Pour the dressing over the salad and toss to combine.
- Garnish with fresh parsley and serve chilled or at room temperature.
