Cheesy Chicken and Bean Quesadillas

Ingredients:
- 4 whole wheat tortillas
- 200g of shredded cheese (cheddar or Mexican blend)
- 150g of cooked chicken, shredded
- 100g of black beans, rinsed and drained
- 50g of bell pepper, diced
- 1 tsp of olive oil
- ½ tsp of cumin
- ½ tsp of chili powder
- Salt to taste
- Sour cream for serving (optional)
Kitchen Tools Needed:
- Stovetop
- Non-stick skillet
- Spatula
- Knife
- Cutting board
Instructions:
- Heat olive oil in a non-stick skillet over medium heat.
- In a bowl, combine the shredded chicken, black beans, diced bell pepper, cumin, chili powder, and salt.
- Place one tortilla in the skillet and sprinkle half of the cheese on one half of the tortilla.
- Spoon half of the chicken and bean mixture onto the cheese.
- Fold the tortilla in half, covering the filling, and cook until the bottom is golden brown.
- Flip the quesadilla and cook until the other side is golden and the cheese is melted.
- Remove from the skillet and repeat the process for the second quesadilla.
- Slice into wedges and serve with sour cream if desired.
