Cheesy Chicken and Bean Quesadillas

Ingredients:

  • 4 whole wheat tortillas
  • 200g of shredded cheese (cheddar or Mexican blend)
  • 150g of cooked chicken, shredded
  • 100g of black beans, rinsed and drained
  • 50g of bell pepper, diced
  • 1 tsp of olive oil
  • ½ tsp of cumin
  • ½ tsp of chili powder
  • Salt to taste
  • Sour cream for serving (optional)

Kitchen Tools Needed:

  • Stovetop
  • Non-stick skillet
  • Spatula
  • Knife
  • Cutting board

Instructions:

  • Heat olive oil in a non-stick skillet over medium heat.
  • In a bowl, combine the shredded chicken, black beans, diced bell pepper, cumin, chili powder, and salt.
  • Place one tortilla in the skillet and sprinkle half of the cheese on one half of the tortilla.
  • Spoon half of the chicken and bean mixture onto the cheese.
  • Fold the tortilla in half, covering the filling, and cook until the bottom is golden brown.
  • Flip the quesadilla and cook until the other side is golden and the cheese is melted.
  • Remove from the skillet and repeat the process for the second quesadilla.
  • Slice into wedges and serve with sour cream if desired.
